    COCONUT RICE RECIPE | KOBBARI ANNAM

    Coconut Rice is an easy and flavourful rice made with freshly grated coconut and with few spices. It is one of the most basic South Indian recipes which we make for festivals and special occasions.

    In other languages, it's known as kobbari Annam or nariyal chawal. This is an easy yet tasty recipe to pack in a child's lunch box. There are two ways to make this rice: one is to temper all of the spices with freshly grated coconut before combining them with the pre-cooked rice, and the other is to make a one-pot meal by cooking the rice, spices, and coconut milk together.     This rice can be eaten with any curry, but we typically serve it with POTATO FRY or ALOO MATAR CURRY or with CAULIFLOWER POTATO FRY

    INGREDIENTS TO MAKE COCONUT RICE:

    COCONUT RICE RECIPE WITH STEPWISE INSTRUCTIONS:

    1.Add oil and salt to the cooked rice and mix well. Then keep aside.

    2.Heat a pan with oil and once it is hot enough, add mustard seeds, urad dal, cumin seeds. Then saute for a few seconds.

    3.Now add channa dal, dry chillies, green chillies and cashew nut. Saute for few minutes until they change their colour slightly.

    4. Add hing and curry leaves then fry for a couple of seconds. Now add the grated coconut and sauté on low - medium flame until you get a nice aroma or slight colour change (Do not burn the coconut).

    5. Now add cooked rice and mix well until it is nicely combined with the coconut mixture. Add salt as per your taste and mix well again.

    6. Finally, add chopped coriander leaves and switch off the flame.

    NOTES:

    • You can adjust the green chillies according to your taste.
    • You can make this recipe using leftover rice.
    • For this recipe, you can also use frozen grated coconut but I recommend fresh coconut.

    Ingredients

    • Cooked rice - 2 cups
    • Freshly grated coconut - 1 cup
    • Mustard seeds - 1Tsp
    • Urad dal -1Tsp
    • Cumin seeds - 1Tsp
    • Channa dal - 1Tbsp
    • Dry red chillies - 2
    • Slit green chillies - 3 or 4
    • Cashew nuts - 2Tbsp
    • Hing/asafoetida - ¼Tsp
    • Curry leaves
    • Oil- 3Tbsp
    • Salt to taste
    • Finely chopped coriander leaves

    Instructions

    • Next add Hing, curry leaves and fry for few seconds. Now add the grated coconut and sauté on low - medium flame until you get a nice aroma or change their colour lightly. (Don't burn the coconut)
    • Now add cooked rice and mix well until it is nicely combined with the coconut mixture. Add salt as per your taste and mix well again.
    • Finally, add chopped coriander leaves and switch off the flame.
