    Baby Potato Fry Recipe | Potato Roast

    Baby Potato Fry - Is an easy and simple recipe made with small potatoes along with few spices which are readily available in our kitchen. It is a spicy and delicious roast which is usually served as a side dish along with rice, chapati/roti.

    Baby Potato Fry

    Coming to the recipe, this potato fry is now our family's favourite side dish. I prepare this recipe very often in my home. The process of making this fry is very simple. Boil potatoes, remove the skin and toss them with red chilli powder, coriander powder, cumin powder and turmeric powder. Then saute them in a pan along with few more spices and the fry will be ready.

    BABY POTATO FRY RECIPE WITH STEP WISE INSTRUCTIONS:

    Ingredients:

    • Baby potatoes/small potatoes -250 grams
    • Red chilli powder - 1tsp
    • Coriander powder -1tsp
    • Kashmiri chilli powder -½tsp 
    • Cumin Powder -½tsp
    • Turmeric powder -¼tsp
    • Mustard + Urad dal - ½ tsp
    • Cumin seeds -½tsp
    • Green chilli-ginger paste -1tsp
    • Amchur powder/Dry mango powder -1tsp
    • Curry leaves
    • Coriander leaves
    • Oil- 2tbsp
    • Salt to taste

    Baby Potato Fry

    Preparation:

    wash the potatoes and boil in enough water with salt until it is cooked.

    Drain the water and allow the potatoes to cool.

    Remove the skin and take them in a bowl.

    Add chilli powder, coriander powder, cumin powder, Kashmiri powder, turmeric powder and salt to taste. Toss well.

    Heat a pan, add oil and allow it to heat. Add mustard, urad dal, cumin seeds and allow it to crackle.

    Then add curry leaves and fry for few seconds.

    Add the green chilli-garlic paste and saute for a few minutes.

    Next, add the potatoes along with masala and saute well for 2-3 minutes.

    Then sprinkle little water and fry for a few minutes.

    Add amchur powder and mix well.

    Finally, add coriander leaves and switch off the flame.

    Transfer the spicy and tasty potato roast with your favourite dish. Here we served it with dal and rice.

    Note:

    Adjust the spices according to your taste.

    You can make this dish with regular potatoes also.
