Zucchini: also known as courgette. Use baby or regular zucchini. These have the most flavour. Large zucchini will have more water
Parmesan cheese: Freshly grated parmesan cheese gives the best flavour.
Breadcrumbs: I used vegan panko breadcrumbs; you can use almond flour or plain flour
Seasonings: Black pepper, smoked paprika, oregano and salt are used

How to make air fryer Zucchini ?
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Wash the zucchinis and cut them into sticks, about ½-inch thick and 3-4 inches long.
In a shallow dish, mix the breadcrumbs, grated parmesan cheese, oregano, paprika, salt, and black pepper.
Coat the zucchini sticks nicely with the panko mixture.
Press the breadcrumbs onto the zucchini to ensure they stick well.
Place the coated zucchini sticks in a single layer in the preheated air fryer basket. Make sure they are not touching each other, so they cook evenly.
Lightly spray the zucchini fries with cooking spray, or drizzle them with a little olive oil to help them crisp up even more.
Cook the zucchini fries in the air fryer for about 8–10 minutes, flipping them halfway through the cooking time. Cook until they are golden brown and crispy.
Once they are done, remove the fries from the air fryer and serve them immediately.
