Air Fryer egg puffs are easy, delicious and popular tea-time snacks made with hard-boiled eggs and onion-tomato filling. Store-bought puff pastry sheets make the entire process very easy to make at home.

About the recipe
Egg puff/ mutta puffs are a perfect snack sold in Indian bakeries. These crispy and delicious egg puffs are made with eggs and onion filling.
To make the process simple and convenient I have used a ready-to-roll puff pastry sheet. Making these puffs in the air fryer is so easy and it will be done in less than 10 minutes.

Here's a list of ingredients you'll need to make egg puff
The 2 main ingredients for this recipe are hard-boiled eggs and a puff pastry sheet
I have used a ready-to-roll store-bought pastry sheet. You can use homemade puff pastry
Ground Spices – red chilli powder, coriander powder, turmeric powder and garam masala
Onion and tomato are used for the stuffing
Milk – For washing, you can use egg white in place of milk

Instructions
How to make air fryer egg puffs
Hard boil the eggs. Peel and slice them lengthwise into half. Set aside
Heat a pan with oil on medium heat, add chopped onions, and a pinch of salt and cook, occasionally stirring until they turn translucent and lightly browned on the edges.
Add tomatoes, red chili powder, coriander powder, garam masala, and turmeric powder and mix well.
Add 2- 3 tablespoon of water.
Mix well and cover and cook for 2-3 minutes until all the mixture is nicely cooked and the raw smell goes. Turn off the heat. Set aside to cool.
Next, carefully remove the pastry sheet and cut it into 8 equal rectangles.
Place 1 tablespoon of the prepared onion mixture in the centre.
Then place half an egg on top with the yoke side down.
Bring the opposite corners of the puff pastry over the egg and pinch lightly to seal it
Air fryer egg puffs
Brush milk on top of the puffs. Repeat the same process with the rest of the sheets.
Place the puffs in the air fryer basket in a single layer leaving some space between them.
Place the basket back into the air fryer and set the timer for 8-9 minutes at 180 C (350 F)
Once the timer goes off, remove the basket from the air fryer and check whether they are done or not

How to make egg puffs in the oven
Preheat the oven to 180 C (350 F).
Line a baking tray with parchment paper and place the puffs on the tray in a single layer by leaving some space between them
Bake for 15-20 minutes or until they are golden brown.
Substitutions and Variations
Instead of milk, you can use egg wash to brush on the puffs to get the golden brown colour.
To make it spicier you can add ginger garlic paste
In place of chopped tomato, use tomato puree
Curry puffs: If you don't eat eggs, then replace them with a vegetable mixture
Serving suggestions:

Storage:
Fridge: Cool the cooked puffs completely, store them in an air-tight box, and store them in the fridge. They stay good for 2-3 days.
Reheat: Reheat them in the air fryer for 1 minute. You can also reheat them in a preheated oven for 5 minutes or until they are hot enough
Top tip
When working with puff pastry you should work quickly before it loses its shape.
Here I have used ready-to-use pastry sheets and I followed the instructions on the package. So if you are using frozen sheets, plan ahead and thaw the sheets at least 30 minutes before you begin the process.
Don't pull the sheets when they are frozen, they can break easily.
If you think pastry sheets are getting difficult to roll sprinkle some plain flour and roll.
Allow the onion masala to cool completely before placing it on the sheets.
When placing the puffs in the air fryer leave some space between each of them. so that they can puff up easily and cook evenly
FAQ
The puffs will become soft if we keep the pastry sheets at room temperature for too long. The sheets should be cold enough while working otherwise they do not turn crispy and flaky.
Puffs should always be baked at high temperatures. so preheat the oven or air fryer before making. Along with that brush, the puffs with milk or egg

- 2 tablespoon Oil
- 1 teaspoon Red chilli powder

- 1 Chopped tomato (medium)
- 2-3 tablespoon Water
- 2 tablespoon Milk optional
