Sweet Palmiers - This is one of the easiest puff pastry cookies to make with just 2 ingredients. These are so crispy and delicious and also amazing snacks that everyone will love.
What are Palmiers?
Palmiers are classic french cookies. They are sweet and buttery and too easy to make. Palmiers, which translates to “palm trees” in English, got their name due to the cookies resemblance of the palm leaf and are also called Elephant ears

Ingredients you'll need
Here's a list of ingredients you'll need to make these coconut cookies.
- Puff pastry sheet - I used ready to use puff pastry as it is easy to use and saves time
- White granulated sugar

How to make sweet palmiers
Preheat the oven to 200 degrees C
Line a baking tray with parchment paper and keep it aside.
Take the pastry sheet from the fridge and keep it on the countertop for 5 minutes.
Unfold the sheet and spread the sugar evenly.
Roll up the larger sides until they meet at the centre.
Wrap the rolled sheet in cling film and keep in the fridge for 10-15 minutes
Use a sharp knife cut them into equal size pieces(approx 1.5 cm )
Roll the cookies in the remaining sugar and arrange them on the baking sheet
Slightly open them into a v shape.
How to bake palmiers:
Put the tray in the oven and bake at 200 C (400 F) for 15-20 minutes and remove the tray outside and carefully flip them to the other side and bake for another 5-10 mins or until the cookies turns golden colour
Remove the tray and allow the cookies to cool for 5 minutes and then transfer to wire rack to cool completely
Enjoy crispy and delicious cookies with a cup of tea/coffee

Variations of making sweet palmiers
- Cinnamon powder - add 1 tablespoon of cinnamon powder to the sugar to make cinnamon palmiers
- Light brown sugar - instead of white sugar you can use brown sugar
Storage
- You can make the cookies ahead, cover them with cling film, and put in the fridge. You can bake them later or even the next day
- Store the baked cookies in a tightly closed container. They taste best about 2 hours after baking them. Good for 2-3 days.
