Lotus Biscoff Spread Brownies
These brownies are fudgy and thick loaded with biscoff spread, butter, chocolate chips and crumbles of lotus biscuits.
If you love fudgy brownies and biscoff, you are going to fall in love with this easy brownie recipe. It is hard to resist with one brownie.

Ingredients you'll need
Here's a list of ingredients you'll need to make these fudgy brownies.
- Sugar - Here I used brown and white sugar,but can use either one of them or both
- Butter- I used unsalted butter
- Chocolate chips - Used dark chocolate chips,but can use any milk chocolate chips too or half of each
- Cocoa powder - Organic cocoa powder is used
- Eggs, Biscoff spread, lotus biscuits, Plain flour and salt are used
- Vanilla bean paste - instead of bean paste you can use vanilla extract or essence

How to make biscoff brownies
Preheat the oven to 180 degrees celsius or 356 Fahrenheit
Line an 8*8-inch pan with parchment paper and keep aside.
First, add 10 to 12 lotus biscuits in a zip lock bag and crush them using a rolling pin into crumbs and set them aside
To a mixing bowl, add unsalted melted butter, chocolate chips and microwave for 20 seconds and stir well until the chocolate melts completely.
Now add the cocoa powder and mix well without any lumps.
Add ½ cup of brown sugar,¼ cup white sugar and mix well using a whisk until it is nicely combined.
Then add eggs and incorporate well with the batter. Next, go vanilla bean paste and mix well.
Add plain flour and combine well without over mixing the batter. Then add the crumbled lotus biscuits and mix well.
Transfer the batter into a pre-lined tin and even it.
Melt the biscoff spread in a microwave for a few seconds.
Add the spread on the brownie batter and make a swirly using a toothpick.
Bake at 180 degrees celsius or 356 Fahrenheit for 30 minutes
Once it's done remove it from the oven and allow it cool completely.
Slice them into pieces and enjoy fudgy brownies!

Yes, you can freeze these brownies in a zip lock bag for up to 3 months. Thawa overnight in the fridge before serving.
