    Eggless Kaju Pista Cookies Recipe |Cashew Pistachio Biscuits

    Eggless Kaju Pista Cookies are perfect tea time snack, which are delicious with the nutty combination of cashews and pistachio. I prepared these cookies with whole wheat flour and added cardamom powder for the flavour. I am very happy that they came out very well.

    Here I used the same cookie dough recipe which I used for Eggless Whole Wheat Cookies and then just added finely chopped cashews and pistachio to make the cookies.

    Here goes my 9th recipe for Bake a thon hosted by Srivalli of Cooking 4 all Seasons.

    Step by step preparation of Eggless Kaju Pista Cookies

    Eggless Kaju Pista Cookies

     

    Ingredients:

    • Whole wheat flour-11/2 cup (I used chapati wheat flour)
    • Unsalted butter-½ cup
    • Powdered sugar-½ cup
    • Cardamom powder-1tsp
    • Custard powder-2tbsp
    • Baking powder-1tsp
    • Finely chopped cashews-3tbsp
    • Finely chopped pistachio-3tbsp
    • Salt-½tsp
    • Milk as required

     

    Preparation:

    In a large mixing bowl, beat butter, powdered sugar until they are creamy and fluffy.

    Sift the flour, baking powder, custard powder and chopped nuts in the butter mixture, along with salt. Mix them well.

    Then add 2 tablespoons of milk to the mixture and combine well to form a soft dough. If the mixture is dry add one more tablespoon of milk.

    Place the dough on a cling film and shape it into a log.

    Then wrap it tightly and keep in the refrigerator for at least 2hours.

    Once the dough is chilled, preheat the oven to 180°C

    Line and grease the baking tray with parchment paper.

    Now slice the chilled log evenly and place the cookies carefully in a baking tray and bake for 10-12 minutes or until you see the edges turning into golden colour. (Here mine done at 12 mins)

    After taking the tray out from the oven, allow it to cool in the baking tray for 5minutes before transferring on to a wire rack to cool completely.

    Enjoy delicious and crisp Kaju Pista cookies with a cup tea/coffee.

    Notes

    If the dough mixture is dry add an extra 1 or 2 tablespoons of milk.
    Don't forget to keep the dough in the refrigerator for at least 1-2 hours.
