Samosa is a popular Indian snack made with potato filling and covered with a pastry sheet and deep fried.
Making these pinwheels with puff pastry is much easier and quicker than the traditional method.
With puff pastry, there is no need for deep frying and you can make them ahead of time and bake them in the oven or air fryer when needed.

Ingredients
- Puff pastry sheet: I have used a ready-to-roll store-bought pastry sheet. You can use homemade sheets
- Boiled Potatoes: Used regular potatoes, green chillies and grated ginger
- Dry spices: Fennel seeds, red chilli powder, coriander powder, turmeric powder, garam masala, chaat masala and roasted cumin powder are used
- Liquids: sunflower is used, you can use any oil like olive oil or groundnut oil
- Dried Fenugreek leaves: It adds a nice flavour to the stuffing
- Herbs: Handful of coriander leaves

Instructions
How to make puff pastry samosa pinwheels
Heat a pan with oil. When it’s hot add fennel seeds, green chillies and grated ginger. Saute for a few minutes.
Next, add mashed potatoes along with red chilli powder, coriander powder and turmeric powder.
Now add the rest of the dry spices along with salt and mix well.
Cook on low heat for 4-5 minutes or until everything combines.
Finally, add dried fenugreek leaves along with a handful of coriander leaves, mix well and switch off the heat
Allow the filling to cool down to room temperature before we start the pinwheels.
Remove the puff pastry from the fridge 10 minutes before being the process or as per instructions on the package.
Carefully unfold the puff pastry sheet and spread the filling evenly on the sheet
Roll from the long side tightly into a log. Seal the edges thoroughly by pressing both sides together
Cut the roll with a knife into equal size pinwheels and arrange them on a baking sheet.
Brush the pinwheels with milk. Place the rolls in the air fryer basket in a single layer leaving some space between the rolls
.
Place the basket back into the air fryer and set the timer for 8-9 minutes at 180 C (350 F)
Once the timer goes off, remove the basket from the air fryer and check whether they are done or not
The golden brown colour indicates they are perfectly done. If not keep it for another 2-3 minutes extra.

How to make samosa pinwheels in the oven
Preheat the oven to 180 C (350 F).
Line a baking tray with parchment paper and place the sliced pinwheels on the tray in a single layer by leaving some space between the pinwheels.
Bake the samosa pinwheels for 15-18 minutes or until they are golden brown.
Substitutions
Garam masala - instead of garam masala lettuce, you can use dry mango powder
You can skip dried fenugreek leaves if you can't find them.
Variations
Squeeze a half lemon juice into the potato filling for a tangy flavour
Add some green peas and crumble paneer for paneer lovers!
Simply add any leftover dry curry and make curry puffs.

Storage
Freeze: Place the unbaked rolls on the baking sheet and place them in the freezer till frozen.
Then place the frozen pinwheels in a freezer-safe bag or an air-tight box and keep them in the freezer for 3 months.
You can bake or air fry whenever you needed.
Fridge: You can store bake pinwheels in an air-tight box for 2-3 days in the refrigerator.
Reheat in an air fryer for 2- 3 minutes before serving.
Top tip
When working with puff pastry you should work quickly before it loses its shape.
Here I have used ready-to-use pastry sheets and I followed the instructions on the package. So if you are using frozen sheets, plan ahead and thaw the sheets at least 30 minutes before you being the process.
Don't pull the sheets when they are frozen, they can break easily.
If you think pastry sheets are getting difficult to roll sprinkle some plain flour and roll.
Allow the potato stuffing to cool completely before spreading it on the sheets.
When placing pinwheels in the air fryer leave some space between each pinwheel. so that they can puff up easily and cook evenly.
