This easy and quick Tomato rice is mild rice with full of flavours that goes perfect with any veg/non-veg gravy. This is a one pot meal which is prepared by sautéing onion, tomatoes with ginger garlic paste and then combining with rice and cooked on low flame for 10-15 minutes. Even you can make this tomato rice in a pressure cooker. We usually serve this rice with egg tomato thokku and raita.
STEP BY STEP PICTURES OF MAKING TOMATO RICE
Ingredients:
- Basmati rice- 1 cup
- Chopped tomatoes -3 medium
- Ginger garlic paste- 2tsp
- Sliced onions- 2
- Slit green chillies- 4
- Bay leaves- 2
- Cloves- 4
- Cinnamon stick- ½ inch
- Cardamom pods- 2
- Turmeric powder- ½ tsp
- Shah Jeera – 1tsp
- Garam masala- 1tsp
- Ghee- 4tbsp
- Oil- 1tsp
- Salt to taste
- Coriander leaves- a handful
- Mint leaves- a handful
Preparation:
Wash and soak the basmati rice for 15 minutes.
Meanwhile slice the onions, green chillies and keep aside.
Heat a non-stick pan, add ghee, oil once they heat, add shah jeera along with cloves, cinnamon stick, bay leaves and cardamom pods.
Next add the sliced onions, green chillies and sauté them till onions change its colour.
Then add ginger garlic paste and fry till raw smell goes.
Add chopped tomatoes along with mint, coriander leaves, garam masala powder, turmeric powder and mix well and fry for 2-3 minutes on low flame until tomatoes become mushy.
Drain the water from the rice and add to the saucepan and mix gently without
breaking the rice and fry for a minute.
Add 1 ½ cup hot water and salt according to taste and mix well.
Cover with lid and cook on low flame for 15 minutes or till the rice is cooked.
Then gently fluff up the rice with fork and transfer into a serving plate and enjoy this easy and quick tomato rice with your favourite curry.
