    Aloo Gobi Recipe - Cauliflower Potato stir fry

    Aloo gobi - Here comes the best and simple, delicious and flavour packed cauliflower potato stir fry. Aloo means potato and Gobi to cauliflower. This is a popular Indian dish which is prepared in every home in India and it goes well with plain rice, roti or chapati.

    There are so many variations in making this stir fry, sometimes I make it semi-dry to have with JEERA RICE and COCONUT PULAO. Depending upon my mood and time I make them in different style. I like to have it as fry rather than curry.

    Making this potato cauliflower stir fry is very easy and it takes less than 30 minutes to prepare. In this recipe, you can also add peas along with aloo and gobi.

    INGREDIENTS TO MAKE ALOO GOBI:

    ALOO GOBI RECIPE WITH STEP WISE INSTRUCTIONS:

    INGREDIENTS:

    • Cauliflower/gobi - 1 cup(25o grams) cut into small florets
    • Potato/aloo - 2 medium cubed
    • Onion - 1 cup chopped
    • Tomato - 1 medium chopped
    • Ginger garlic paste - 1Tsp
    • Green chillies - 1 Tbs
    • Garam masala - ½ Tsp
    • Red chilli powder- 1 ½ Tsp
    • Turmeric powder - ½ Tsp
    • Cumin seeds - 1Tsp
    • Mustard + urad dal - ½ Tsp
    • Curry leaves - 1Tbs
    • Coriander leaves
    • Oil - 2 to 3 Tbs
    • Salt to taste

    PREPARATION:

    Chop the cauliflower florets into bite-size and soak in hot water for 5 minutes. Then drain the water completely and keep aside.

    Peel and cut the potatoes into small cubes and soak in water until you use.

    Heat a pan with oil, once it is hot add mustard seeds,urad dal and cumin seeds.Allow them to crackle.

    Add chopped onions and saute until they turn into translucent. Then add green chillies and saute for 2- 3 minutes.

    Now add ginger garlic paste, curry leaves and sauté until raw smell goes. Drain water from potatoes and add to the pan followed by cauliflower and saute on a medium flame for 2-3 minutes.

    Add turmeric powder, salt and mix well. Close the pan with lid and cook on low - medium flame for 5 minutes ,keep stirring occasionally .

    Then add red chilli powder, chopped tomato and fry for a few minutes. Cover and cook for another 5 minutes on low- medium flame or until is cooked. Don't forget to stir in between.

    Now add garam masala and sauté well and cook for further 2 minutes. Finally, add chopped coriander leaves and switch off the flame and enjoy!

    NOTES:

    • Adjust the spices according to your taste.
    • You can add peas to this stir fry.
