Mixed vegetable kurma or korma can be made in different styles. Here, today I am sharing this recipe in a very simple method that is using a pressure cooker. You can serve this dish in so many ways like with roti ’s, pulao and even with dosa /Idly.
Ingredients:
- Mixed veggies- (potatoes, cauliflower, beans, carrots, peas)- 1cup
- Finely chopped onions-2nos
- Finely chopped tomatoes- 2nos
- Ginger garlic paste-2tsp
- Cloves-2nos
- Cinnamon-½ inch
- Bay leaves-1nos
- Green cardamom pods-2nos
- Green chilled-2nos
- Red chili powder- 1 ½tsp
- Coriander powder-1 ½tsp
- Garam masala powder-1tsp
- Coconut chunks-2tbsp
- Poppy seeds- 1 tsp
- Fennel seeds- ½tsp
- Turmeric powder-½tsp
- Salt to taste
- Oil-3tbsp
Preparation:
1. Heat a pressure cooker with oil and then add all the spices. Once they crackle add chopped onions, slit green chilies along with ginger garlic paste and fry on low to medium flame till they are cooked
2. Next, add chopped tomatoes and cook till they are mashed
3. Then add the mixed veggies along with coriander and mint leaves. Sauté them nicely so that all the veggies are coated with the masala
4. In the meanwhile, grind coconut, poppy seeds and fennel seeds with water into a smooth paste
5. Add red chili powder, coriander powder and garam masala to the veggies and season them with required salt and mix well
6. Add coconut paste mixture to the veggies with required water you want for the kurma and pressure cook it for 2 whistles
7.Once the pressure releases mix everything well and add coriander leaves.
8. Serve this kurma with roti’s or pulao
