Courgette Fritters is a very simple and easy snack which goes well with evening coffee or tea. My hubby told me that these fritters very delicious and tasted like chicken. Here in the recipe, I grated the courgette and squeezed the water from it then added the gram flour and prepared these Fritters. They are crispy from outside and soft from inside
Ingredients:
- Courgette- 2 medium ones
- Red chilli powder-1 ½tsp
- Cumin seeds/jeera-1tsp
- Turmeric powder-½tsp
- Gram flour/besan-¼ cup
- Ginger garlic paste-1tsp
- Curry leaves
- Coriander leaves
- Salt to taste
- Oil for deep frying
Preparation:
1.wash the courgette, peel the skin and grate it. Here I have grated the courgette in a food processor.
2. In a bowl add the grated courgette along with salt and turmeric powder. Mix everything well and leave it on the counter for 5-10 mins
3. Then squeeze as much of water from the courgette mixture.
4. Next Add chilli powder, cumin seeds, curry leaves and coriander leaves.
5. Slowly add the gram flour so that it combines well with the mixture. Note: If the mixture is too loose add 1-2 tablespoon of gram flour
6. Heat a pan with oil for deep frying and add a small dough mixture evenly. Fry them till they turn into golden colour on medium flame.
7.Repeat the process until you complete the whole dough mixture
8. Transfer into a kitchen towel to absorb any excess oil from them and then enjoy delicious courgette fritters with your favourite chutney or sauce.

Hi, in step 3 when you squeeze the water ot of the courgette, do you discard the water or do you keep it in the bowl for the gram flour to soak in? Thanks!
Hi Tanyeem, After squeezing the water, discard it. There is no need to add any water to mix the gram flour.
