This crisp and delicious Aloo Tikki is a popular Indian street food snack made with boiled potatoes, spices and herbs. These patties can be served as it is or with some condiments like green chutney.
What is aloo tikki?
Aloo means potato and Tikki to patties is a popular Indian snack made with potatoes, spices and herbs. There are so many variations in making this snack. Today I am sharing the easy and basic method which can be done in 30 minutes.

Ingredients you'll need
Here's a list of ingredients you'll need to make these patties
- Potatoes - Peeled, cubed and boiled until soft
- Dry spices - Coriander, cumin, chaat masala and red chilli powder
- Corn flour - used as a binding agent
- Bread crumbs - Here I have used vegan bread crumbs,
- Herbs - I have used Ginger, green chillies and coriander leaves

How to make aloo tikki : step by step
Rinse the potatoes, peel them, and boil them until they are just done.
Boiling the potatoes in Instant Pot Method:
Place the potatoes on a trivet, add 2 cups of water to the pot and pressure cook for 7-8 minutes. Allow the pressure to release naturally. Remove the skin and use it.
Remove the potatoes from the water and allow them to cool completely.
Into a bowl, add the cooled potatoes and mash them using a masher.
Now add red chilli, coriander, cumin and amchur powder and mix well.
Add grated ginger, green chillies, salt and finely chopped coriander leaves and combine well.
Now add cornflour, bread crumbs and bind them together to form a ball. If the mixture is sticky and you are not able to make a ball, add more bread crumbs. Note: The mixture should not stick to your hands when you're making patties.

Divide the mixture into equal parts and make tikkis big or small as per your taste. Shape them by flattening in between your palms and keep aside on a plate.
Heat a pan with 2 to 3 tablespoon of oil for shallow frying. Before adding the patties to the pan make sure the oil is hot enough.
Carefully add the aloo tikkis to the pan and fry them on medium flame until they turn golden colour on both sides.
Remove them onto kitchen paper to absorb any excess oil.

Substitutions
Bread crumbs work well as a binding agent in making the patties, in order to remove moisture from the potatoes and makes crispy patties.
Alternatively, you use rice flour, roasted gram flour or poha or flattened rice powder.
Chaat masala - you replace it with garam masala if you can't find it.
Variations
To make aloo chaat: Place the fired Tikki in a serving bowl and top it with sweet chutney, green chutney and curd.
For Aloo Tikki burger: Toast the buns with butter and spread a little bit of yoghurt mint chutney, followed by some lettuce, cucumber and place the Tikki in between the buns and enjoy!
For tortilla wrap: slightly mash the patties and place it on top of lettuce, sliced cucumber, with some dipping sauce like sweet chilli sauce or mayonnaise and wrap it tightly.
Storage
You can freeze these patties. After shaping the Indian aloo patties, place them on a tray and freeze them until they are frozen. Take them out and place them in a ziplock bag or airtight container. They stay good for 2-3 months
Before frying the patties thaw them thoroughly.
These potato patties stay good for 2- 3days in the fridge when stored in an airtight box.
Tips and tricks
Boil potatoes until they are just soft and don't overcook them.
After boiling the potatoes drain the water completely and allow it to stand for a few minutes.
Allow them to cool completely and then mash or grate the potatoes. Don't add the binding agent when the mixture is hot otherwise, it will become sticky.
Add the patties to the pan when oil is hot enough otherwise they absorb oil and will not be crispy. If this happens add 1or 2 tablespoon extra bread crumbs to the mixture and combine well.
Notes:
- Skip green chillies if you are making for kids or toddlers.
- Adjust the spices according to your taste.
Frequently asked questions
Yes, you can freeze them. Place the shaped tikkis on a tray and keep them in the freezer until they are firm. Remove them and store in a freezer-safe ziplock bag or container.
Aloo Tikki is served as a snack with green chutney(cilantro dip) and tomato ketchup. You can also serve with tamarind chutney too.

Ingredients
- 3 Boiled potatoes ( medium)
- 1 teaspoon Red chilli powder
- ½ teaspoon Coriander powder

- 1 teaspoon Grated ginger
- 2 tablespoon Cornflour
- 4 tablespoon Breadcrumbs
- 2 tablespoon Coriander leaves finely chopped
- Salt to taste
- 3-4 tablespoon Oil for shallow fry
Instructions
