This restaurant-style bhindi do pyaza is flavorful, delicious, and simple to make. This easy Indian dish is prepared with okra, onions, spices, and tomatoes. It goes well with roti or paratha or jeera rice or ghee rice. Vegan and Gluten-free dish.
What is bhindi do pyaza?
Bhindi means okra and Do means twice & Pyaza refers to onions. Okra cooked with double the amount of onions and cooked with spices. In this recipe, we use onions in two stages.
In the first stage, we caramelizing the onions with spices and tomatoes and in another stage frying the cubed onions.

Tips to make best okra stir fry
To prevent the okra from becoming slimy, wash it properly and dry it thoroughly before cutting it into the right size. Sliminess is caused by moisture.
Always fry the okra on high to medium heat before adding to curry and also never close the lid while cooking to prevent okra from getting slimy.
Ingredients used for stir fry
- Bhindi/okra -250 grams
- Onion - 1 medium (cut into cubes)
- Cumin seeds - 1Tsp
- Onion - 1 medium (chopped)
- Red chilli powder - 2 Tsp
- Coriander powder - 1 Tsp
- Garam masala - 1 Tsp
- Turmeric powder - ยฝ Tsp
- Dry red chillies - 2
- Tomato - 1 medium (chopped)
- Curry leaves a handful
- Oil - 3 to 4 Tbsp
- Salt to taste
- Coriander leaves a handful
How to make bhindi do pyaza
Preparation:
Wash the okra thoroughly and pat dry them.
Cut into 1-inch pieces and keep aside.
Heat a pan with 2 tablespoon of oil, add the okra and fry for 8-10 minutes on medium-high heat until the okra turns light brown colour.
Transfer them into a bowl and keep them aside.
Now chop one medium onion into cubes and keep aside.
In the same pan add 1 tablespoon of oil followed by cubed onions and saute for few minutes until they change their colour slightly.
Remove the fried onions into a bowl and keep them aside.
Then heat the same pan again 2 tablespoon of oil, once it is hot add cumin seeds and allow them to crackle.
Add the chopped onions, dry red chillies, curry leaves, turmeric powder and fry for 3-5 minutes.
Now add ginger garlic paste and saute for few minutes. Add chopped tomatoes and cook until the tomatoes become mushy.
Add red chilli powder, coriander powder,garam masala and required salt and saute without burning the masala.
Then add ยผ water and mix well and cook for few minutes.
After that add the fried okra and stir well, then add the fried onion cubes and mix well and cook for 2 -3 minutes.
Finally, switch off the heat and add chopped coriander leaves
