This weekend has very bad weather.All the two days it was windy,rainy n cold.We couldn't step out of the home.Both my kids got cold and Sathya has got more.He was not able to sleep properly in the night due to the cold.two days we stayed in the home looking after kids.
Coming to the recipe as i told sathya got cold too much,he wanted me to be with him for the whole day.so i thought of preparing simple and easy lunch for us on Sunday.Then i prepared this simple chicken fry which can be had with rice or roti's.
Boneless chicken-250gms
Chilli Pwd-1tsp
Coriander Pwd-1tsp
Cashew nuts paste-1tbsp
Ginger garlic paste-1tsp
Onion-1big no.
Tomato-2medium no.
Clove-2nos.
Cinnamon-1inch no.
Cardamom-2nos.
Turmeric a pinch
Salt to taste
oil-2tbsp
Chopped coriander leaves few
First cut n clean the chicken into small pieces.
Chop onions,tomato's and keep aside.
Heat a nonstick pan with oil,add spices ,chopped onions and fry till the onions turns light golden colour.Add ginger garlic paste and again fry for few more mints till raw smell goes.Then add chopped tomato's along with chilli and coriander pwd and cook till tomato's becomes soft.
Add chicken pieces and stir well so that all the ingredients are well mixed with chicken pieces.cook on high flame for 10mints stirring in middle.
Simmer the flame and cook with closed lid for few mints or till chicken is cooked.Once chicken is cooked well add cashew nuts paste and mix well.Cook for few mints and finally add chopped coriander leaves.
Enjoy this chicken fry either with rice or rotis.
