Learn how to make Instant Pot Rice Kheer or Indian Rice Pudding - Creamy and delicious rice pudding that is flavoured with saffron and cardamom. Rice pudding, also known as kheer or payasam, is a famous Indian dessert prepared to celebrate every big and small happy occasion.

INGREDIENTS TO MAKE RICE KHEER:
Rice - Usually Basmati rice is used to make this kheer, but you can any white rice.
Milk- Here I used whole milk which makes kheer creamy.
Sugar - I used normal granulated white sugar if you prefer you can use brown sugar too.
Ghee - I used homemade clarified butter
INSTANT POT RICE KHEER RECIPE WITH STEPWISE INSTRUCTIONS:
Wash and soak the basmati rice for 30 minutes.
Place the inner pot inside the Instant Pot.
Switch on the sauté mode. Once the inner pot is hot. Add ghee.
Now add cashew nuts, raisins and saute them until they turn into golden colour. Once they golden take them into a bowl and keep them aside.
Drain the water from the rice and add to the pot and sauté for few minutes or until the rice is nicely coated with ghee. Add water, milk and sugar. Mix well.
Now cancel the saute mode. Close the lid and keep the valve in sealing mode. Select the porridge mode. Once the cooking is done, allow the pressure to release naturally.
Open the lid and switch on the saute mode. Add one more cup of milk and mix well. Add cardamom powder and roasted nuts and give a quick mix.
Finally add saffron strands and mix well. Cancel the sauté mode and enjoy the rice kheer warm or cold.
NOTES:
- Adjust the quantity of sugar according to your taste.
- Here I have used a totally of 5 cups of milk, but you can increase or decrease the quantity of milk to your desired consistency
- You can make it Vegan by using almond or coconut milk in place of milk and substitute ghee with vegan butter.
- You can use your choice of nuts.
