Banana Loaf Cake is a very easy, soft and delicious cake which you can enjoy with a cup of tea or coffee. The secret ingredient for this wonderful cake is the ripe bananas. My whole house was filled with banana aroma.
I Prepared this cake in the afternoon before my kids come back from school. As soon as they entered the house, they were looking for what I have prepared as the aroma was coming outside my house too. By the time, I am writing this post can anyone guess how many slices of cake is left? it only 2slices left. I am very happy that the cake came very well and the kids loved it very much.

Ingredients:
1 Cup Measure = 240ml
- Plain flour/Maida/All-purpose flour – 1 ½ cup
- Unsalted butter -½ cup (125 grams)
- Caster Sugar -⅔ cup
- Large eggs-2
- Ripe bananas-3 (large)
- Vanilla extract – 1 tsp
- Baking Soda -1tsp
- Salt-½ Tsp
Preparation:
Preheat the oven to 180°C /356°F.
Grease and line the loaf tin with baking paper/parchment paper.
In a bowl, mash the bananas with the help of a fork and keep aside.
Take a bowl, sift plain flour and baking soda. Keep aside.
In a mixing bowl using an electric hand blender, cream the butter and sugar until light and fluffy.
Then add eggs and slowly beat until they are combined.
Add the mashed bananas, vanilla extract and beat slowly.
Next add the sifted flour, baking soda along with salt and slowly beat.
Transfer the batter into the greased loaf tin and bake for 50-60 minutes or until the skewer comes clean (here I baked exactly 55 mins)
Allow it to cool in the tin for 10-15 mins and then transfer it on a wire rack to cool completely.
After that slice the banana loaf cake and enjoy with a cup of tea or coffee.
