    Vegetable Dum Biryani | How To Make Veg Biryani

    Vegetable Dum Biryani is aromatic and flavourful rice. This is an excellent rice dish that is infused with lots of fragrant spices and loaded with vegetables. This is cooked with layers of rice and mixed vegetables. I am sure that this will be a great treat for all Veg Biryani lovers.

    For the sixth day of Blogging Marathon, I made this flavourful and tasty Vegetable  Dum Biryani.

    Vegetable Dum Biryani

    STEP BY STEP PICTURES OF MAKING VEGETABLE DUM BIRYANI 

    Ingredients:

    • Basmati rice- 1 cup
    • Carrot, beans, potatoes, cauliflower, peas – 1cup chopped
    • Ginger garlic paste- 2tsp
    • Sliced onions- 2
    • Slit green chillies- 4
    • Bay leaves- 2
    • Cloves- 4
    • Cinnamon stick- ½ inch
    • Cardamom pods- 2
    • Star anise - 1
    • Turmeric powder- ½ tsp
    • Shah Jeera – 1tsp
    • Biryani masala- 2tsp
    • Red chilli powder -2tsp
    • Fried onions- ½ cup
    • Ghee- 4tbsp
    • Oil- 1tsp
    • Milk- ¼ cup
    • Saffron few strands
    • Rose water – 1tsp
    • Salt to taste
    • Coriander leaves- a handful
    • Mint leaves- a handful

    Vegetable Dum Biryani

    Preparation:

    Wash and soak the basmati rice for 15-20 minutes.

    Meanwhile slice the onions, green chillies and keep aside.

    Cooking the Veggies

    Heat a non-stick pan with ghee, oil and add shah jeera along with cloves, cinnamon stick, bay leaves and cardamom pods.

    Next add the sliced onions, green chillies and sauté them till onions change its colour.

    Then add ginger garlic paste and fry till raw smell goes.

    Next add mixed vegetables along with biryani powder, turmeric powder, red chilli powder, salt and sauté for a minute.

    Add chopped mint, coriander leaves, yoghurt, mix well and fry for 2-3 minutes on low flame or until veggies are 90% cooked.

    Switch off the flame and keep aside.

    Meanwhile, warm the milk. Add saffron strands to the milk and mix well. Keep aside.

    Cooking Rice for Biryani

    Heat a heavy bottom saucepan with water and bring it to a boil. Add salt and check the seasoning.

    Drain the rice and add it to the water and cook the rice for 8-10 minutes or until the rice is 70% cooked.

    It should not be cooked fully.

    Then using a colander drain the rice and keep aside.

    Layering the Biryani

    Take a heavy bottom saucepan, add ghee on the bottom of the pan and spread evenly.

    First add one layer of vegetable mixture followed by some mint, coriander leaves, fried onions and top with an even layer of rice.

    Sprinkle saffron milk, mint leaves, coriander leaves and some fried onions.

    Repeat the process with the remaining vegetable mixture followed by an even layer of rice on top.

    Finally, on the top of the rice add the remaining mint, coriander leaves and fried onions followed by 1 tablespoon of ghee and rose water.

    Cover the pan with silver foil and close the lid tightly.

    Cook on low – medium flame for 20– 25 minutes.

    Once 20 minutes is done leave the pan like that for some time without opening the lid.

    Serve this delicious Vegetable Dum Biryani with onion raita or with your favourite gravy.

    Note:

    While cooking the rice make sure it is only 70% is cooked.

    The water in which we cook the rice should be a little salty.

      I am a great fan of Biryanis and they are a regular feature at home . The Dum Biryani sounds delicious , with lots of veggies and spices . It looks perfectly cooked and would make such a wonderful Sunday lunch .
