First of all Wishing my friends a Happy pongal.I have prepared spicy Egg curry which goes great with rotis or rice.Here i have onions,tomatoes,chili and coriander powder along with coconut powder.I like doing experiments with cooking.So i made this curry.
Boiled Eggs-4nos
Finely chopped onions-2medium nos
Finely chopped tomatoes-2medium nos
Ginger garlic paste-1tsp
Chili powder-1tsp
Coriander powder-1tsp
Coconut powder-1tbsp
Mustard+urd dal-1tsp
Cumin seeds-1tsp
Curry leaves a few
Turmeric powder-½tsp
Chopped coriander leaves for garnishing
Salt to taste
Oil-2tbsp
Preparation:
Heat a pan with oil,add mustard+urd dal along with cumin seeds once they splutter,add chopped onions along with salt and fry till they turn into light brown colour.
Add ginger garlic paste and fry till raw smell goes out.Now add chopped tomatoes along with turmeric pwd and cook till tomatoes become soft.
Then add little water to the mixture,add chili and coriander powders and stir well.Now add coconut powder and mix well.
Now add required water and cook till it becomes little thick.In mean time make slits to the boiled eggs and keep aside.Once the gravy become thick add boiled eggs and cook for 3mints with closed lid.Finally add chopped coriander and turn off the hob.
Transfer it in a serving bowl and enjoy greatly with rotis or rice.
