Coriander Rice Pulao is very simple and flavourful rice which you can serve with plain yoghurt. And you don’t need to search for any side dish to this rice. Whenever I am very busy and there no veggies to cook, this pulao comes very handy. It takes hardly 25 -30 minutes to prepare this rice. This pulao is perfect for kid’s lunch box and picnic too.
First time, I am taking part in the Mega Blogging Marathon hosted by Srivalli. I am very excited as for this whole April month we will be coming up with full Biryani, Pulao and Kichadi recipes. Step by step pictures of preparing Coriander Rice Pulao
Ingredients:
- Basmati rice – 1cup
- Roughly chopped onions-2
- Cloves-2
- Bay leaves-2
- Cinnamon stick a small piece
- Cardamom pods- 2
- Star Anise
- Shah jeera- 1tsp
- Oil- 2tbsp
- Ghee- 2tbsp
- Salt to taste
To Grind:
- Coriander leaves- 1cup
- Mint leaves a handful
- Green chillies-4
- Ginger a small piece
- Garlic pods-3
Preparation:
Wash and soak the rice in the water for 15mintues.
In the meanwhile, add coriander leaves, mint leaves, green chillies, ginger and garlic into a blender and grind into a smooth paste by adding a little bit of water.
Heat a pressure cooker with oil and ghee, then add cloves, cinnamon, bay leaves, star anise cardamom along with shah jeera.
When they begin to crackle add chopped onions and fry for 2mintues or until the onions turn into light golden-brown colour.
Add the grounded paste along with salt and sauté till the raw smell goes.
Drain the water from the rice and add to the pressure and mix everything gently so that you don’t break the grains.
Add 1 ½ cup of water and mix well. Check the seasoning.
Close the lid and cook on medium flame for 2 whistles.
Once the pressure is released from the cooker with the help of fork fluff the rice.
Transfer the coriander rice pulao into a serving bowl and enjoy with simple onion raita.
Note:
You can increase or decrease the green chillies according to your taste.
You can prepare this rice in a pot also instead of a pressure cooker.
