Egg Fried Rice Recipe | How to make egg fried rice

Egg fried rice

Egg fried rice is very easy to prepare if you’re in a rush. This can be prepared with leftover rice or cooked rice. I regular prepare this rice in my home. Here goes the recipe.

 

Egg fried rice

 

Ingredients:

  • Basmati rice – 1 cup
  • Eggs- 4nos
  • Spring onions- 1/2cup
  • Pepper powder-1 Tsp
  • Soya sauce-1 tbsp
  • Finely chopped capsicum – 1 no
  • Finely chopped carrot – 1 no
  • Finely chopped beans – 4 no’s
  • Salt to taste
  • Oil-2 Tbsp

Egg fried rice

 

Preparation:

1. Wash and soak the rice for 15 mins. Once 15 mints are over drain water from the rice and keep aside.

2. Heat a pan with 1 tsp of ghee, add the rice and sauté it nicely so that all the grains are nicely coated with the ghee.

3. Then add 1 1/2 cup hot water and 1tsp of salt and stir well. Close the lid and cook on low flame 10-12 mins or until rice is cooked.

4. Spread the cooked rice into a plate and allow it to cool.

5. In the mean, while cracking the eggs into a bowl, add salt, pepper and mix well.

6. Add 1tsp of oil to a pan and heat, then add the egg mixture and scrambled it. Keep aside.

7. Next, in the same pan add oil, add the chopped veggies and sauté them on high flame (keep some spring onions for garnish) for 2-3 mins.

8.soya sauce and cook further for 2-3 mins until veggies are cooked. Next, add the cooked rice along with scrambled eggs and mix well. Add pepper powder, required salt and mix well.

9. Finally, garnish with the remaining spring onions and enjoy delicious egg fried rice.
