Just now I finished making these lovely and yummy Coffee and walnut cupcakes. I made these cupcakes for myfriend, whom we are visiting tomorrow for lunch. These cupcakes are really very easy to do, just
add all the ingredients to one bowl and beat on medium to low speed for 2 to 3 minutes and bake it
for 20 minutes. Here goes the recipe.
Makes 12
Cooking time 20 minutes
Ingredients:
Self-raising flour-150g
Baking powder-½tsp
Golden caster sugar-125g
Butter,softened-125g
Eggs-2
Espresso coffee powder-2tsp
Boiling water-2tsp
Chopped walnuts-50g
Salt a pinch
Coffee buttercream :
Espresso coffee powder-1tsp
Boiling water-2tsp
Unsalted butter,softened-100g
Icing sugar-150g
Walnut halves, to decorate
Preparation:
Preheat oven to 180C.
Line a 12-section bun tray with paper cake cases.
Blend the coffee powder with the boiling water. Put the butter, caster sugar, egg, flour and baking powder in a bowl. Add the coffee and beat with an electric hand mixer for 2 to 5 minutes on medium to low speed until light and creamy. Stir in the chopped walnuts. Divide the cake mixture between the paper cases.
Bake in a preheated oven 180C for 20 minutes or until risen and just firm to the touch. Transfer to a wire rack to cool.
For Coffee buttercream:
Blend the coffee powder with the boiling water. Beat the butter and icing sugar in a bowl until pale and creamy.
Put the buttercream in a piping bag fitted with a star nozzle and pipe swirls over the tops of the cakes. Decorate each with a walnut half.
