Naga Galho Recipe is a soupy concoction similar to khichdi and is made with fresh green leaves, vegetables, rice, with meat and without meat. To prepare this Galho they use fermented soya or bamboo. Here I made this khichdi without meat and fermented soya. The process of making this dish is very simple and I made it in a pressure cooker which is done under 20 minutes.
This Naga Galho is a dish from Nagaland, which is a state in the northeast of India. Their cuisine features meat, fish, fermented soya and fresh vegetables.
My partner for this month for Nagaland cuisine in Shhh Cooking Secretly Challenge is Mayuri Patel from Mayuri's Jikoni. Do check her blog for a beautiful collection of recipes from desserts to rice dishes and etc. She gave me fresh green leaves and tomato as my secret ingredients and I gave her tomato and garlic as her secret ingredients and she came up with a delicious Naga Tomato Chutney.

STEP BY STEP PICTURES OF MAKING NAGA GALHO RECIPE
Ingredients:
- Rice – ½ cup
- Spinach/palak – ½ cup
- Green chillies- 2 or 3
- Chopped tomato – 1
- Ginger garlic paste – ¼ tsp
- Salt to taste
- Water- 2 ½ cups
Preparation:
Wash the rice and keep aside.
Heat a pressure cooker and rice, spinach, green chillies, chopped tomato ginger garlic paste and mix well.
Add 2 ½ cups- 3 cups of water along with salt and mix well again.
Pressure the rice for 2-3 whistle.
Once the pressure is released, open the lid and mash the khichdi with help of the back of a spoon.
Transfer the Naga Galho to a serving bowl and enjoy when it is warm with Homemade tomato chutney.
