    Lemon rice/Chitraannam

    Lemon rice or Chitraannam is prepared in home every Tuesday for naivedyam for god "Subramanyam"along with curd rice.This is to be compulsory to prepare in my home i.e either lemon or tamarind rice.
    Of course it is easy to prepare ingredients required are also few..just cook the rice and keep aside by mixing it with oil,salt,turmeric pwd and lemon juice. Then fry curry leaves,mustard seeds,cashew nuts,green chillies,groundnuts in oil and add the rice and mix well.


    Ingredients:

    Rice-1cup
    Green chillies-2nos
    Channa dal-½tsp
    Mustar+urd seeds-1tsp
    Groundnuts-2tbsp
    Cashew nuts-2tbsp
    Curry leaves and coriander leaves
    Lemon-1
    Turmeric pwd-½tsp
    Oil-2tbsp
    Salt to taste

    Preparation:
    Wash and soak rice with 2cups of water in a pressure cooker for 5mints.Once 5mints is done.Keep the pressure cooker on hob and cook for 2whistles.wait for few mints to cool the cooker.

    Once it is cooled take the rice and spread on a plate along with 1tsp of oil,salt and turmeric pwd and mix well without making the rice mashed.

    Heat a pan with remaining oil,add mustar+urd+channa along with curry leaves,once the seeds pop add slit green chillies along with cashew and ground nuts and fry for few mints till all ingredients turn light golden colour.Remove from the hob and allow to cool.

    In the mean while cut the lemon and extract juice from it and keep aside.(For getting juice quickly from the lemon soak lemon in hot water for few mints then the juice comes easily.) Add this juice to the cooked rice and mix well.Then the fried ingredients and again mix well.

    Finally add chopped coriander leaves and transfer into serving bowl and enjoy..

      Interesting ... I do make it once in a while ... but then I dont mix the rice with anything ... all of the above mentioned ingredients go in the hot oil ... hmmm .... I think i will try ur receipe the next time 😛
