Capsicum masala rice recipe is a very easy and delicious dish which you can enjoy with simple raita. This rice is prepared by sautéing the capsicum, onion, tomato with spices and then mixed with cooked rice.
The best part is that you can make this dish even with leftover rice. I added green, red, yellow bell pepper to prepare this rice.
The rice is a little bit spicy as I added green chillies along with other spices. So, adjust the spices and green chillies according to your taste.

STEP BY STEP PICTURES OF MAKING CAPSICUM MASALA RICE RECIPE
Ingredients:
- Cooked Basmati rice – 1cup
- Lengthwise chopped bell pepper/capsicum – ¾ cup (green, red, yellow)
- Sliced onion – 1 small
- Chopped tomato – 1 small
- Slit green chillies – 2
- Ginger garlic paste – 1tsp
- Cumin seeds – 1tsp
- Chopped garlic pods – 2
- Red chilli powder – 1tsp
- Cumin powder – ¾ tsp
- Garam masala – ½ tsp
- Black pepper powder – ½ tsp
- Curry leaves a few
- Coriander leaves a handful
- Oil – 3tsp
- Salt to taste
Preparation:
Heat a pan with oil, add cumin seeds and when they begin to crackle add chopped garlic, green chillies, onions and sauté on high flame for a minute.
Add the chopped capsicum /bell pepper and fry them on medium flame until they are little crisp.
Next, add ginger garlic paste and sauté till the raw smell goes out.
Then add chopped tomatoes along with red chilli powder, turmeric powder, cumin powder, black pepper powder and mix well.
Cook the masala until the tomatoes are mushed.
Add the cooked rice and mix well so that all the masala is nicely combined with rice and cook for 2- 3mintues.
Switch off the flame and add coriander leaves and mix well.
Transfer the capsicum masala rice into a serving bowl and enjoy with raita.
Note:
You can make this dish even with leftover rice.
Adjust the green chillies according to your taste bud.
