    Rajasthani Dahi Kadhi Recipe | Dahi Kadhi Recipe

    Rajasthani Dahi Kadhi is a spiced yoghurt-based sauce mixed with besan and other spices which is usually served with plain steamed rice or jeera rice or roti.

    Coming to the recipe, the first time I made this Dahi Kadhi, it came out really well. It is a very popular dish in North India and is very easy to make at home.

    Rajasthani Dahi Kadhi

    The ingredients required for this recipe are basic ones which are readily available in any Indian kitchen pantry. Like curd, besan/gram flour, dry red chillies, cumin seeds, red chilli powder.

    Shhh Cooking Secretly Challenge

    By now my regular readers would have understood that I came again with another regional recipe for the Facebook group Shhh Cooking Secretly Challenge. My partner for this month for Rajasthani cuisine Challenge is Sujata Roy who blogs at Batter up with Sujata. Do check her beautiful blog for delicious and mouthwatering recipes. She gave chilli powder and cumin seeds as my secret ingredients and I gave her curd/ Yoghurt and green cardamom as her secret ingredients and she came up with a lip-smacking Laal Maans recipe.

     

    Step by step pictures of making Rajasthani Dhai kadhi Recipe

     

    Ingredients:

    Dahi Kadhi mixture

    • Yoghurt /curd – 1 cup
    • Besan/Gram flour – ¼ cup
    • Turmeric powder – ½ tsp
    • Salt – 1tsp

    For Tempering the Rajasthani Dahi Kadhi

    • Ghee -2tbsp
    • Asafoetida/hing – ¼ tsp
    • Mustard seeds – ½ tsp
    • Urad dal – ½ tsp
    • Methi seeds – ¼ tsp
    • Cumin seeds – ½ tsp
    • Dry red chillies – 2or 3
    • Red chilli powder – ½ tsp
    • Bay leaf - 1

    Preparation:

    In a mixing bowl add curd, besan, salt, turmeric powder with 2 cups of water.

    Mix the mixture with the help of whisk without forming any lumps and keep aside.

    Heat a saucepan and add the curd mixture an cook on low – medium flame stirring occasionally.

    Cook the sauce until it thickness a little bit. The sauce should not be either too thick or thin.

    Once the kadhi is thick, switch off the flame. Here it took 15 minutes for me.

    Heat a small pan with 2 tablespoon of ghee.

    when the ghee is hot add mustard, urad dal once they begin to crackle, add cumin seeds along with hing, methi seeds and mix well.

    Now add dry red chillies and fry for 30 seconds.

    Add the red chilli powder and immediately switch off the flame.

    Then add the tempering mixture to prepared Dahi Kadhi and mix well.

    Serve this delicious and spicy Rajasthani Dahi kadhi with steamed rice/roti.

      Kadhi Chawal(rice) is one of our favorite weekend brunches.. this looks so rich and creamy..i liked the used of bay leaves and urad dal in tempering which we do not add.

      Kadhi - total comfort food for me. This kadhi has bowled me over with the images. Tadka is so important in flavouring a kadhi, and yours look like little jewels on the surface of the kadhi! So tempting!
