    Jackfruit Seeds Stir Fry | Jackfruit Seeds Roast

    Jackfruit seeds stir fry is a quick, easy side dish which you can enjoy with plain rice, rasam. This is a delicious dish made using seeds of ripe jackfruit which is first boiled, then roughly chopped and stir-fried with spices.

    JACKFRUIT SEEDS STIR FRY WITH STEP WISE INSTRUCTIONS:

     

    Ingredients:

    • Jack fruit seeds-1cup
    • Turmeric powder a pinch
    • Onion-1 chopped
    • Ginger-1tsp chopped finely
    • Chilli powder-1tsp
    • Coriander powder-½tsp
    • Oil-2tsp
    • Mustard seeds-½tsp
    • Urad dal-½tsp
    • Cumin seeds-½tsp
    • Curry leaves-1 spring
    • Salt to taste

    Preparation:

    • Soak the jackfruit seeds for half an hour in water. Then cut and peel the skin from the seeds. Keep aside.
    • In a saucepan pour water and bring it to boil. Add salt, turmeric to the boiling water.
    • Slowly add the peeled seeds and boil for a few minutes. Do not over boil the seeds, they should be firm.
      Drain the water from the seeds and allow it cool. Then chop them roughly.
    • Heat frying pan, add 2tsp oil. Once the oil is hot add mustard seeds, urad dal, cumin seeds and curry leaves. Fry for a few seconds.
    • Next, add chopped onions, ginger and fry till they turn into translucent.
    • Add roughly chopped jackfruit seeds and saute for few minutes.
    • Next, add the turmeric, chilli powder and coriander powder. Mix well.
    • Cook for 5to7 minutes on medium flame and switch off the flame. Transfer the Jackfruit seeds stir fry into a serving bowl and enjoy with steamed rice and rasam.

    You can serve this dish with  Ghee Rice, Jeera Rice and Coconut Milk Pulao.
