    This Bitter Gourd Roast is a healthy and delicious recipe which you can prepare with few ingredients only. There are so many version to prepare this roast. Frankly speaking after so many years I tasted again this bitter gourd. I don’t know for some reason I did not like this gourd from my childhood days because of the bitterness from it. In my family, everyone likes it a lot except me. These years I used to make this fry only for my hubby only, when I prepared this dish he asked to taste and I said no, but he told just to have one piece and I tried to my shock I liked it. Even when preparing this fry I even don’t check the salt and spices.

    Coming to the recipe, for this month in Food bloggers Recipe swap I have to cook from Priya Satheesh blog “Priya's Menu.” So, I want to make something easy at the same time a little bit healthy recipe from her site. Then I came across this recipe and made it immediately. Do check her site where you can find a collection of delicious recipes.

    STEP BY STEP PICTURES OF MAKING BITTER GOURD ROAST

     

    Ingredients:

    • Bitter gourd – 3 medium
    • Red chilli powder – 1 ½ tsp
    • Coriander powder – 1 ½ tsp
    • Turmeric powder - ½ tsp
    • Tamarind – a small marble size
    • Salt to taste

    For Tempering:

    • Oil – 2tsp
    • Cumin seeds – ½ tsp
    • Mustard sees – ½ tsp
    • Urad dal – ½ tsp
    • Curry leaves

    Bitter Gourd Roast

    Preparation:

    Trim the bitter gourd and cut into round pieces.

    Soak tamarind in a bowl with hot water and keep aside.

    Heat a pan, then add bitter gourd pieces, salt, red chilli, coriander powder and turmeric powder. Mix well.

    Extract tamarind juice and add it to the bitter gourd pieces along with half of water.

    Cover and cook on medium flame until water is completely evaporated. Keep aside.

    Heat another pan with oil, add mustard seeds, cumin seeds, urad dal and curry leaves.

    When they begin to splutter add the cooked bitter gourd pieces and roast them on both sides until they turn into brown colour.

    Remove them into a serving bowl and enjoy with piping steamed rice along with sambar or curd rice.

      Bitter gourd is something I just can't get myself to eat except when umma makes mulakittathu with it... your roast looks tempting, especially with the addition of the tamarind...

      Hello Pavni,Bitter Gourd is really tasty to eat, I love it very much, Even my two little kids are very fond of this food.They like it because of 1 reason.If i will tell you the reason then you will definitely like this.The reason is before cooking i dip the cutting bitter gourd into the water for 10-15 minutes then soak it and fry it.You may try it!I think you will fall in love with Bitter Gourd..
