Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Wash the zucchinis and cut them into sticks, about ½-inch thick and 3-4 inches long.
In a shallow dish, mix the breadcrumbs, grated parmesan cheese, oregano, paprika, salt, and black pepper.
Coat the zucchinis sticks nicely with panko mixture. Press the breadcrumbs onto the zucchini to ensure they stick well.
Place the coated zucchini sticks in a single layer in the preheated air fryer basket. Make sure they are not touching each other, so they cook evenly.
Lightly spray the zucchini fries with cooking spray or drizzle them with a little olive oil to help them crisp up even more.
Cook the zucchini fries in the air fryer for about 8-10 minutes, flipping them halfway through the cooking time. Cook until they are golden brown and crispy.
Once they are done, remove the zucchini fries from the air fryer and serve them immediately.
You can enjoy them as is or serve them with your favorite dipping sauce.
