Preheat the oven to 180 degree celsius or 356 Fahrenheit
Line a 8*8 inch pan with parchment paper and keep aside.
First, add 10 to 12 lotus biscuits in a zip lock bag and crush them using a rolling pin into crumbs and set them aside
To a mixing bowl, add unsalted melted butter, chocolate chips and microwave for 20 seconds and stir well until the chocolate melts completely.
Now add the cocoa powder and mix well without any lumps.
Add ½ cup of brown sugar ,¼ cup white sugar and mix well using a whisk until it is nicely combined.
Then add eggs and incorporate well with the batter.Next goes vanilla bean paste and mix well.
Add plain flour and combine well without over mixing the batter.Then add the crumbled lotus biscuits and mix well.
Transfer the batter into a pre lined tin and even it.
Melt the biscoff spread in a microwave for few seconds.
Add the spread on the brownie batter and make a swirly using a toothpick .
Bake at 180 degree celsius or 356 Fahrenheit for 30 minutes
Once its done remove from the oven and allow it cool completely.
Slice them into your desired pieces and enjoy!
