First, wash and peel the skin of the potatoes and then cut them into small pieces. Next, soak them in a bowl of water until you start using them.
Next, cut the ginger and green chillies into small pieces and keep them aside. Now, heat a pan with oil and then add cumin seeds. Then allow it to crackle and add green chillies, curry leaves and chopped ginger. Saute for a couple of minutes.
After that, add chopped potatoes, turmeric, red chilli, coriander, cumin powder and salt to taste. Then, mix well and saute for few minutes on medium flame.
Next, cover and cook the potatoes for 8-10 minutes on a low-medium flame until the potatoes are nicely cooked.
After 10 minutes, open the lid and mix well. By now, it will be cooked nicely - if not cook for another couple of minutes.
Now, switch off the heat and squeeze half of a lemon into the potatoes. Then, add finely chopped coriander leaves and mix well.
Finally, transfer the delicious fry into a serving bowl and enjoy!
