Add oil and salt to the cooked rice, mix well and keep aside.
Heat a pan with oil, once it is hot enough add mustard seeds, urad dal, cumin seeds and saute for few seconds. Now add channa dal, dry chillies, green chillies and cashew nut. Saute for few minutes until they change their colour slightly.
Next add Hing, curry leaves and fry for few seconds. Now add the grated coconut and sauté on low - medium flame until you get a nice aroma or change their colour lightly. (Don't burn the coconut)
Now add cooked rice and mix well until it is nicely combined with the coconut mixture. Add salt as per your taste and mix well again.
Finally, add chopped coriander leaves and switch off the flame.
