Chop the cauliflower florets into bite-size and soak in hot water for 5 minutes. Then drain the water completely and keep aside.
Peel and cut the potatoes into small cubes and soak in water until you use.
Heat a pan with oil, once it is hot add mustard seeds, urad dal and cumin seeds. Allow them to crackle.
Add chopped onions and saute until they turn translucent. Then add green chillies and saute for 2- 3 minutes.
Now add ginger garlic paste, curry leaves and sauté until raw smell goes. Drain water from potatoes and add to the pan followed by cauliflower and saute on a medium flame for 2-3 minutes.
Add turmeric powder, salt and mix well. Close the pan with a lid and cook on a low - medium flame for 5 minutes, keep stirring occasionally.
Then add red chilli powder, chopped tomato and fry for a few minutes. Cover and cook for another 5 minutes on low- medium flame or until is cooked. Don't forget to stir in between.
Now add garam masala and sauté well and cook for further 2 minutes. Finally, add chopped coriander leaves and switch off the flame and enjoy!
