Ingredients

  • Vermicelli/semiya – 1cup
  • Sugar – ¾ cup
  • Ghee – 4 Tbsp
  • Cardamom powder – ½ Tsp
  • Nuts-cashew, raisins – 3 to 4 Tbsp
  • Orange food colour a pinch optional
  • Water – 2 cups

Instructions

  • Heat a pan, add ghee and allow it to melt.
  • Add cashew, raisins and roast them until they turn into a golden colour. Take them into a bowl and keep aside.
  • In the same pan add semiya and roast on low flame until it turns into golden colour.
  • Add water, stir well. Cook it for 5 minutes on low flame stirring occasionally.
  • Add sugar and mix well. Allow the sugar to dissolve completely.
  • Next, add a pinch of orange food colour(optional) and mix well.
  • Cook on low flame until sugar is completely absorbed.
  • Then cardamom powder roasted nuts and mix well.
  • Once the mixture leaves the side of the pan, turn off the flame.
  • Transfer into a serving bowl and enjoy Semiya Kesari when is hot or cold.
