Soak the jackfruit seeds for half an hour in water. Then cut and peel the skin from the seeds. Keep aside.
In a saucepan pour water and bring it to boil. Add salt, turmeric to the boiling water.
Slowly add the peeled seeds and boil for a few minutes. Do not over boil the seeds, they should be firm.
Drain the water from the seeds and allow it cool. Then chop them roughly.
Heat frying pan, add 2tsp oil. Once the oil is hot add mustard seeds, urad dal, cumin seeds and curry leaves. Fry for a few seconds.
Next, add chopped onions, ginger and fry till they turn into translucent.
Add roughly chopped jackfruit seeds and saute for few minutes.
Next, add the turmeric, chilli powder and coriander powder. Mix well.
Cook for 5to7 minutes on medium flame and switch off the flame. Transfer the Jackfruit seeds roast into a serving bowl and enjoy with steamed rice and rasam
