  • Frying Pan


  • Bitter gourd – 3 medium
  • Red chilli powder – 1 ½ tsp
  • Coriander powder – 1 ½ tsp
  • Turmeric powder - ½ tsp
  • Tamarind – a small marble size
  • Salt to taste

For Tempering:

  • Oil – 2tsp
  • Cumin seeds – ½ tsp
  • Mustard sees – ½ tsp
  • Urad dal – ½ tsp
  • Curry leaves


  • Trim the bitter gourd and cut into round pieces.
  • Soak tamarind in a bowl with hot water and keep aside.
  • Heat a pan, then add bitter gourd pieces, salt, red chilli, coriander powder and turmeric powder. Mix well.
  • Extract tamarind juice and add it to the bitter gourd pieces along with half of water.
  • Cover and cook on medium flame until water is completely evaporated. Keep aside.
  • Heat another pan with oil, add mustard seeds, cumin seeds, urad dal and curry leaves.
  • When they begin to splutter add the cooked bitter gourd pieces and roast them on both sides until they turn into brown colour.
  • Remove them into a serving bowl and enjoy with piping steamed rice along with sambar or curd rice.
