This Easy Chickpea Salad is a very healthy recipe which you can prepare within 10-12 minutes if have chickpeas ready in hand. To make little bit creamy and crunchy I used feta cheese, red onion, bell peppers and olives.

Ingredients
  • Cooked Chickpeas – 2 cups
  • Chopped cucumber -1/4 cup
  • Roughly chopped red onions – ¼ cup
  • Bell peppers – ¼ cup chopped into cubes
  • Feta cheese – ¼ cup
  • Sliced olives – ¼ cup
  • Black pepper – 1tsp
  • Olive oil – 3tbsp
  • Lemon juice -3tbsp
  • Finely chopped coriander leaves – ¼ cup
  • Salt to taste
Instructions
  1. In a large mixing bowl, add all the chopped veggies along with cooked chickpeas. Here you can use store brought tins.
  2. Next, crumble the feta cheese and add to the mixing bowl.
  3. Add olive oil, lemon juice along with black pepper and required salt.
  4. Toss all the ingredients to combine well.
  5. Transfer into a serving bowl and enjoy a healthy and colourful salad.
Recipe Notes
  • You can also use store brought tins to prepare this salad.
  • Adjust salad dressing according to your taste.
