This Easy Chickpea Salad is a very healthy recipe which you can prepare within 10-12 minutes if have chickpeas ready in hand. To make little bit creamy and crunchy I used feta cheese, red onion, bell peppers and olives.
Easy Chickpea Salad, Healthy Salad
Cooked Chickpeas – 2 cups
Chopped cucumber -¼ cup
Roughly chopped red onions – ¼ cup
Bell peppers – ¼ cup chopped into cubes
Feta cheese – ¼ cup
Sliced olives – ¼ cup
Black pepper – 1teaspoon
Olive oil – 3tablespoon
Lemon juice -3tablespoon
Finely chopped coriander leaves – ¼ cup
Salt to taste
In a large mixing bowl, add all the chopped veggies along with cooked chickpeas. Here you can use store brought tins.
Next, crumble the feta cheese and add to the mixing bowl.
Add olive oil, lemon juice along with black pepper and required salt.
Toss all the ingredients to combine well.
Transfer into a serving bowl and enjoy a healthy and colourful salad.
