In a mixing bowl, add wheat flour along with salt, chopped onions, finely chopped green chillies, red chilli powder, ajwain seeds, amchur powder, coriander powder and finely chopped coriander leaves. Mix well.
Now slowly add water to make a soft and firm dough.
When the dough is formed add 2tbsp of oil and combine well.
Cover and rest the dough for 10-15 minutes.
Divide the dough into equal balls and keep aside.
Heat a non -stick pan on a low- medium flame.
Dust the working surface with the wheat flour and using a rolling pin roll the dough into a circle shape.
Now place the rolled dough on to the pan and fry both sides on low – medium flame by adding a little bit of oil.
Cook until both sides turn into light brown, be careful not to burn the flatbread.
Repeat the process with the rest of the dough.
Serve this delicious Sindhi Koki while it is hot with your favourite chutney or yoghurt.
Here we had this Sindhi Koki for lunch along with tomato chutney and yoghurt and it was so good.
