Egg Fried Rice Recipe

Egg fried rice is very easy rice to prepare if you’re in a rush. This can be prepared with leftover rice or cooked rice.

Ingredients

  • 1 cup Basmati rice
  • 4 Eggs
  • ½ cup Spring onions
  • 1 teaspoon Pepper powder
  • 1 tablespoon Soya sauce
  • 1 Finely chopped capsicum
  • 1 Finely chopped carrot
  • 4 Finely chopped beans
  • Salt to taste
  • 2 tablespoon Oil

Instructions

  • Wash and soak the rice for 15 mins. Once 15 mints are over drain water from the rice and keep aside.
  • Heat a pan with 1 teaspoon of ghee, add the rice and sauté it nicely so that all the grains are nicely coated with the ghee.
  • Then add 1 ½ cup hot water and 1tsp of salt and stir well. Close the lid and cook on low flame 10-12 mins or until rice is cooked.
  • Spread the cooked rice into a plate and allow it to cool.
  • In the mean, while cracking the eggs into a bowl, add salt, pepper and mix well.
  • Heat a pan with 1tsp of oil and add the egg mixture and scrambled it. Keep aside.
  • Next, in the same pan add oil, add the chopped veggies and sauté them on high flame (keep some spring onions for garnish) for 2-3 mins.
  • soya sauce and cook further for 2-3 mins until veggies are cooked. Next, add the cooked rice along with scrambled eggs and mix well.Add pepper powder, required salt and mix well.
  •  Finally, garnish with the remaining spring onions and enjoy delicious egg fried rice.
