Heat a pan with oil. When it’s hot add fennel seeds, green chillies and grated ginger. Saute for a few minutes.

Next, add mashed potatoes along with red chilli powder, coriander powder and turmeric powder.
2 Boiled potatoes medium size, 1 teaspoon Red chilli powder, ½ teaspoon coriander powder, ½ teaspoon turmeric powder
Now add the rest of the dry spices along with salt and mix well.
½ garam masala, ¼ teaspoon chaat masala, ½ teaspoon cumin powder
Cook on low heat for 4-5 minutes or until everything combines.
Finally, add dried fenugreek leaves along with a handful of coriander leaves, mix well and switch off the heat

Allow the filling to cool down to room temperature before we start the pinwheels.
Remove the puff pastry from the fridge 10 minutes before being the process or as per instructions on the package.

Carefully unfold the puff pastry sheet and spread the filling evenly on the sheet
Roll from the long side tightly into a log. Seal the edges thoroughly by pressing both sides together
Cut the roll with a knife into equal size pinwheels and arrange them on a baking sheet.
Brush the pinwheels with milk. Place the rolls in the air fryer basket in a single layer leaving some space between the rolls
Place the basket back into the air fryer and set the timer for 8-9 minutes at 180 C (350 F)
Once the timer goes off, remove the basket from the air fryer and check whether they are done or not.
The golden brown colour indicates they are perfectly done. If not keep it for another 2-3 minutes extra.
Remove the pinwheels from the basket and allow it to cool for a few seconds before serving.
