Ingredients

  • Potatoes - 3 or 4 (medium) chopped
  • Cumin seeds-1tsp
  • Green chillies -1 or 2
  • Red chilli powder-1tsp
  • Coriander powder-1tsp
  • Cumin powder-½tsp
  • Turmeric powder -¼ tsp
  • Ginger -1tsp (chopped)
  • Half a lemon
  • Curry leaves
  • Coriander leaves (handful)
  • Salt to taste
  • Oil-2 tbsp

Instructions

  • First, wash and peel the skin of the potatoes and then cut them into small pieces. Next, soak them in a bowl of water until you start using them.
  • Next, cut the ginger and green chillies into small pieces and keep them aside. Now, heat a pan with oil and then add cumin seeds. Then allow it to crackle and add green chillies, curry leaves and chopped ginger. Saute for a couple of minutes.
  • After that, add chopped potatoes, turmeric, red chilli, coriander, cumin powder and salt to taste. Then, mix well and saute for few minutes on medium flame.
  • Next, cover and cook the potatoes for 8-10 minutes on a low-medium flame until the potatoes are nicely cooked.
  • After 10 minutes, open the lid and mix well. By now, it will be cooked nicely - if not cook for another couple of minutes.
  • Now, switch off the heat and squeeze half of a lemon into the potatoes. Then, add finely chopped coriander leaves and mix well.
  • Finally, transfer the delicious fry into a serving bowl and enjoy!
