Ingredients

  • Chicken - 500 grams
  • Fennel seeds - 1Tsp
  • Cloves- 4
  • Cinnamon stick- ½ inch
  • Cardamom pods- 2
  • Chopped onions -1 big
  • Slit green chillies – 3 or 4
  • Coriander powder-1 ½Tsp
  • Cumin powder-1Tsp
  • Ginger-garlic paste-1Tbsp
  • Black pepper powder - 1 ½ Tsp
  • Turmeric powder-½ Tsp
  • Coriander leaves a handful
  • Curry leaves
  • Oil-3 to 4Tbsp
  • Salt to taste

Instructions

  • Clean and wash the chicken and keep it aside. Heat the oil in a pan and add the fennel seeds and spices once it is hot. Mix thoroughly. Add the chopped onions, slit green chillies, curry leaves, and salt now. On medium heat, sauté onions until they turn a golden colour.
  • Now add the ginger-garlic paste and turmeric powder and cook for a few minutes, until the raw ginger-garlic smell is gone away. Now add the cleaned chicken and cook for 5 minutes on high heat.
  • Then add coriander, cumin, pepper powder, and salt. On medium heat, continue to sauté for a few minutes more. Then cover and cook on low to medium heat for 10-12 minutes, or until the chicken is cooked properly.
  • Open the lid and cook the chicken for another 5 minutes. Finally, add in the finely chopped coriander leaves and turn off the heat.

  • You can adjust the spices to your taste.
  • This fry can be made with boneless chicken.
