Instant Pot Tomato Rice

This is an easy and delicious south Indian tomato rice made with basmati rice, a few spices and herbs in an Instant pot or Pressure cooker or in a normal saucepan. This is a vegan and gluten-free dish.

Ingredients

  • Basmati rice - 2 cups
  • Tomatoes - 2 medium chopped
  • onion - 1 big sliced
  • Cloves- 4
  • Cinnamon - ½ inch
  • Cardamom - 4
  • Bay leaf - 2
  • Shahi jeera/black cumin - 1 tsp
  • Green chillies - 4 slit
  • Ginger garlic paste - 1Tsp
  • Turmeric powder - ½ Tsp
  • Red chilli powder - 1Tsp
  • Garam masala - ½ Tsp
  • Mint leaves a handful
  • Coriander leaves a handful
  • Oil - 2 to 3 Tbs
  • water - 2 ½ cups
  • Salt to taste

Instructions

INSTANT POT METHOD:

  • Wash and soak basmati rice in enough water for 15 minutes.
  • Place the inner pot inside the Instant Pot.
  • Switch on the sauté mode. Once the inner pot is hot, add oil.
  • Add shahi jeera, cloves, cinnamon, cardamom and bay leaf. Stir it.
  • Next, add chopped onions, slit green chillies and fry until onion turns into translucent.
  • Now add ginger garlic paste and sauté until raw smell goes out.
  • Add chopped tomatoes,spice,mint and coriander leaves and sauté for few minutes or unti they are soft and mushy.
  • Drain the water from the rice and add to the pot.
  • Gently mix the rice without breaking the grains.
  • Add 2 ½ cups water and give a quick mix. Then add salt according to your taste.
  • Cancel the sauté mode. Close the lid and keep the valve in sealing mode.
  • Select pressure cook mode and set to high pressure for 5 minutes.
  • Once the cooking is done, allow the pressure to release naturally.
  • Gently fluff the rice with a spoon or fork.
  • Enjoy tasty and delicious coconut milk pulao/pulav with raita or with any curry.

STOVETOP METHOD:

  • wash and soak basmati rice in enough water for 15 minutes. Heat a pan with oil, once it is hot add spices and saute for a minute.
  • Next add sliced onion, green chillies and fry for few minutes.
  • Now add ginger garlic paste and saute until the raw smell goes. Add tomatoes,spices,mint and coriander leaves and saute for a few minutes. Drain water from the rice and add to the pan and saute for few seconds without breaking the grains.
  • Add 2 ½ water and salt according to your taste and give a quick mix.
  • Cover with lid and cook on low- medium flame until water is absorbed or rice is cooked.

  • Adjust spices according to your taste
  • You can use normal rice instead of basmati rice
  • Don't forget to soak the rice
