Place the inner pot inside the Instant Pot.
Switch on the sauté mode. Once the inner pot is hot. Add ghee.
Now add cashew nuts, raisins and saute them until they turn into golden colour. Once they are golden take them into a bowl and keep aside.
Then add grated carrot and sauté for 5 minutes. Add milk and mix well.
Now cancel the saute mode. Close the lid and keep the valve in sealing mode.
Select pressure cook mode and set to high pressure for 5 minutes.
Once the cooking is done, allow the pressure to release naturally. Open the lid and switch on the saute mode.
Add sugar and mix well. Cook on saute mode until it thickens (it takes approx. 20 minutes)
Now Milk powder, cardamom powder and stir well. Cook for 2more minutes. By now the carrot halwa will be thick enough.
Finally, add roasted nuts and mix well. Enough the delicious halwa warm or cold. I personally enough when it is warm.
