Instant Pot Carrot Halwa Recipe

Learn how to make Instant Pot carrot halwa or gajar ka halwa. This is a delicious Indian pudding made with grated carrots, sugar, milk and with some cardamom powder.

Ingredients

  • Grated Carrots - 2 Cups
  • Ghee/clarified butter - 2 Tbsp
  • Cashew nuts - 2 Tbsp
  • Raisins - 1Tbsp
  • Milk - 1 Cup
  • Sugar - ½ to ¾ cup
  • Milk powder - 2 Tbsp optional
  • Cardamom powder - ½ Tsp

Instructions

  • Place the inner pot inside the Instant Pot.
  • Switch on the sauté mode. Once the inner pot is hot. Add ghee.
  • Now add cashew nuts, raisins and saute them until they turn into golden colour. Once they are golden take them into a bowl and keep aside.
  • Then add grated carrot and sauté for 5 minutes. Add milk and mix well.
  • Now cancel the saute mode. Close the lid and keep the valve in sealing mode.
  • Select pressure cook mode and set to high pressure for 5 minutes.
  • Once the cooking is done, allow the pressure to release naturally. Open the lid and switch on the saute mode.
  • Add sugar and mix well. Cook on saute mode until it thickens (it takes approx. 20 minutes)
  • Now Milk powder, cardamom powder and stir well. Cook for 2more minutes. By now the carrot halwa will be thick enough.
  • Finally, add roasted nuts and mix well. Enough the delicious halwa warm or cold. I personally enough when it is warm.

Notes

  • You can store this in an airtight container and keep it in the refrigerator for 2-3 days.
  • Before serving microwave it for 30 seconds and enjoy. Adjust sugar quantity according to your taste.
  • Adding milk powder to the halwa gives a nice texture when you eat. But this is optional.
