Place the inner pot inside the Instant pot.
Switch on the sauté mode. Once the inner pot is hot. Add ghee and allow it to melt.
Then add cumin seeds and allow it crackle.
Add cloves, cinnamon, cardamom, star anise, bay leaf and mace. Stir it.
Next, add chopped onions, slit green chillies and fry until onion turns into translucent.
Add ginger-garlic paste and fry for 1-2 minutes until raw smell goes.
Then add mixed veggies and sauté for 1-2 minutes. Add salt, coriander and mint leaves. Sauté for a few minutes.
Wash the rice under running tap water for 2-3 times. Don’t soak the rice.
Add the rice to the bowl. Saute for a few minutes. Add garam masala and mix well.
Add 3 cups of water and Check for seasoning and add more salt if needed. Mix well.
Cancel the sauté mode. Close the lid and keep the valve in sealing mode.
Select pressure cook mode and set to high pressure for 5 minutes.
Once the cooking is done, allow the pressure to release naturally for 10 minutes, followed by quick pressure release.
Gently fluff the rice with a spoon or fork.
