Wash and cut eggplants into rings. Apply salt lightly to both sides of the rings.
Mix chilli, coriander,hing and turmeric powder.
Apply this mixture to the rings both sides.
In another bowl, mix Rava and gram flour.
Coat the eggplant rings nicely in the flour mixture and keep aside in a plate.
Heat a pan with 1-2 tablespoon of oil, add 2-3 rings to the pan at a time and shallow fry them on medium heat till they turn into golden colour on both sides.
Transfer the fried rings on to a kitchen towel to absorb any excess oil.
