Spicy Eggplant Rings

Spicy Eggplant Rings is a very easy, crispy and delicious starter or side dish. You can prepare this spicy eggplant rings within  15-20 minutes with just a few ingredients.

Ingredients

  • Eggplant/aubergine-1large
  • Red chilli powder-½tsp
  • Coriander powder-½tsp
  • Turmeric powder-¼tsp
  • Hing-a pinch
  • Suji/Rava-2tbsp
  • Gram flour-2tbsp
  • Salt to taste
  • Oil for shallow frying

Instructions

  • Wash and cut eggplants into rings. Apply salt lightly to both sides of the rings.
  • Mix chilli, coriander,hing and turmeric powder.
  • Apply this mixture to the rings both sides.
  • In another bowl, mix Rava and gram flour.
  • Coat the eggplant rings nicely in the flour mixture and keep aside in a plate.
  • Heat a pan with  1-2 tablespoon of oil, add 2-3 rings to the pan at a time and shallow fry them on medium heat till they turn into golden colour on both sides.
  • Transfer the fried rings on to a kitchen towel to absorb any excess oil.
  • Enjoy this tasty eggplant rings with yoghurt dip.
