Chicken Fried Recipe | Quick and Easy Chicken Fried Rice

Chicken Fried Recipe is a quick and easy Chinese dish prepared with fried chicken pieces, veggies and mixed with cooked rice and sauces. After a long time, I made this fried rice and my kids enjoyed it very well. I am very happy that they asked for another bowl of rice after finishing the first one. My little one enjoyed eating the fried chicken pieces.

  • Basmati rice- 1 cup
  • Chopped carrots beans – ¼ cup
  • Chopped spring onion – ¼ cup
  • Red chilli sauce – 11/2 tsp
  • Soya sauce – 1tsp
  • Black pepper powder – 1tsp
  • Eggs – 5
  • Oil - 2tbsp
  • Salt to taste

For Fried Chicken:

  • Boneless chicken -250 grams
  • Red chilli powder – 1tsp
  • Ginger garlic paste – 1tsp
  • Turmeric powder- ¼ tsp
  • Corn flour – 2tsp
  • Salt to taste
  • Oil for deep frying


  1. Wash and soak the basmati rice for 15 minutes.
  2. Wash and cut the chicken into small bite size pieces and keep aside.
  3. Take a bowl, add chicken pieces along with the ingredients mentioned above. Mix well.
  4. Heat a pan with oil and fry the chicken pieces until they turn into a light golden-brown colour. Transfer the fried pieces into a plate and keep aside.
  5. Shred the chicken pieces and keep aside.
  6. Beat the eggs in a bowl and keep aside.
  7. Heat another pan with little oil and add beaten eggs and scramble them. Keep it aside.

Cooking Rice:

  1. Heat a heavy bottom saucepan with water and bring it to a boil. Add salt and check the seasoning.
  2. Drain the rice and add it to the water and cook the rice for 8-10 minutes or until the rice is 80% cooked. It should not be cooked fully.
  3. Then using a colander drain the rice and keep aside.

Making the Fried Rice:

  1. Heat a wok with oil, when the oil is hot add the chopped carrots, beans, half of the spring onions and sauté them on high flame until the veggies turn into a light crisp.
  2. Add the cooked rice along with red chilli sauce, soya sauce and mix well.
  3. Next add the chicken pieces, egg scramble and mix well gently.
  4. Finally, add black pepper powder along with remaining spring onions and mix well.
  5. Switch off the flame and transfer the tasty and mouth-watering chicken fried recipe into a serving bowl and enjoy!
