Instant Malpua Recipe with Condensed Milk

Malpua is basically an Indian sweet pancake especially made during Holi Festival. This malpua is deep fried sweet, flavoured with crushed fennel seeds and usually served with Rabri.

Ingredients

  • Maida/all-purpose flour-1cup
  • Condensed milk-5tbsp
  • Warm milk-1 cup
  • Semolina/Rava-2tbsp
  • Crushed fennel seeds-1tsp
  • Cardamom powder-½tsp
  • Salt a pinch
  • Sugar-1cup
  • Water-½cup
  • Saffron strands a few
  • For garnishing:

  • Chopped pistachios
  • Chopped almonds

Instructions

Making of batter:

  • In a bowl, add Maida, crushed fennel seeds, cardamom powder, salt, semolina and mix well.
  • Now add condensed milk and mix well.
  • Add milk slowly and whisk into a smooth batter without lumps. (here I added extra 2tbsp of water to the batter)
  • The batter should be neither too thin or thick. It should be like flowing consistency.
  • If the batter is thin it will spread a lot and makes holes. And if the batter is thick means the malpua will be dense.
  • Cover and rest the batter for 20-30 minutes.

Making of sugar syrup:

  • In the meantime, add sugar and water into a saucepan and bring to boil for 8-10 minutes till the sugar syrup turns sticky.
  • Add saffron strands into the syrup, mix well. Keep aside.

Making of malpua:

  • Heat a pan with oil on low- medium flame.
  • Now again whisk the batter.
  • With the help of ladle drop a small amount of batter into the oil.
  • Malpua will spread by itself and there is no need to spread it.
  • Fry the malpua on both sides until it turns into golden colour.
  • Drop the cooked malpua into the sugar syrup and soak it for 2-3 minutes.
  • Remove the soaked malpua into a plate and garnish with chopped almonds and pistachios.
  • Enjoy this delicious Malpua warm or cold!

Notes

If the Malpua puffs up when frying, press them in between two spoons to flat them.
