In a mixing bowl of a stand mixer, attached with a dough hook, add flour, yeast, sugar, salt, and mix on low speed. (You can mix the dough with your hands without using a stand mixer)
Then add crushed cumin seeds along with chopped green chillies, chilli flakes, thyme and start mixing on low speed, by adding water until all the ingredients combine together.
Then increase the speed from medium to high speed for a minute or until it forms into a dough.
Cover and rest the dough for 5 minutes and after that add butter and knead for 5-7 minutes. Now cover the dough with kitchen towel and keep in a warm place until it doubles in its size. (it took 90 minutes for me)
After the dough rises, punch the dough and knead for another 5 minutes. Again, cover and rest for 20 minutes.
Now divide the dough equally and roll each ball in palms to get a smooth round ball.
Grease and line the baking tray with parchment paper and place the balls. Cover the tray with a kitchen towel and again rest it for the third time to raise. (it takes 30 minutes)
Meanwhile Preheat the oven to 200°C
Once the buns rise to brush them gently with water and bake at 200°C for 18-20 minutes.
Remove the tray from the oven and apply the melted butter to get the shiny gloss.
Enjoy tasty and delicious masala buns with a dash of butter on it.
