Atukulu Kesari |Atukulu Halwa for Diwali

Atukulu Kesari is a different Kesari from the regular Rava Kesari. Here I roasted the poha and made into coarse powder and then prepared this halwa. This recipe is adapted from Blend with spices by Hari Chandana ponnaluri.

Ingredients

  • Atukulu/poha/Flattened rice- ½ cup
  • Ghee- 5 tbsp
  • Cashew nuts -2tbsp
  • Raisins-1tbsp
  • Cardamom powder-½tsp
  • Sugar-½cup
  • Food colour/ saffron mixed in milk

Instructions

  • Heat a pan and roast the poha for 3-4 minutes
  • Allow it to cool and grind into a coarse powder
  • Again, heat a pan with ghee, fry the cashews and raisins till they turn into golden colour. Take them into a bowl and keep aside
  • In the same pan add the powdered poha mixture and fry 2-3 mins or until a nice aroma comes.
  • Add 1 cup of hot water and combine everything well without any lumps
  • Add the remaining ghee and cook completely.
  • Next add sugar, food colour along with cardamom powder and mix everything well.
  • Keep mixing and cook for 5-6 mins or until it leaves the side of the pan
  • Add the fried cashews, raisins and mix well and transfer into a severing bowl and enjoy this delicious atukulu Kesari with family and friends for this Diwali
